I think there's a whole rigmarole of paperwork you can go through to officially renounce Catholicism and everything that goes with it, so there'll be no doubt of your atheism.
It doesn't make a difference, the act of baptizing is for me insignificant, my parents never sent me to religious education or anything so I'm not registered in the church as a pure catholic, only as an imperfect one.
