Sure, I totally agree with what you are saying. It would rip up the backbone of the "story".
The thing is, the story is utter nonsense. Even when fully intact, it doesn't make any sense. So my feeling is that it won't make any less sense without the starting bit. A lot of christians, and even that pope guy, seem to finally be admitting evolution as fact (or at least grudgingly accepting it) and that adam and eve didn't really happen. In that case, there's no need for a fictional story trying to represent a real event anyway, that kind of makes the story even less credible.
Also, it is my suspicion that an awful lot of christians don't actually know that jesus is meant to be dealing with the apple debacle. It seems to me they just have this vague notion that "jesus died to save us". I've heard that so many times, and when pressed, the christian generally just repeats it. So getting rid of the apple story wouldn't matter to them either. Especially the ones that haven't even read the bible, which I suspect is a fair number. I certainly know it far better than most christians I have heard talk about the matter.
