Use electric chainsaws -- instant shut off time, sane speeds, usually better build. Power's an issue though, I usually have a generator handy.
When we've been forced to use the gas powered chainsaw, it's always exciting. I remember one time that chain slipped off when we were pulling it out of a cut and the goddamn thing literally climbed up the tree. Yes, the fucking loop of a chain had so much energy that it climbed up the tree we were cutting down, reaching 5 feet before falling down.

Fun stuff.

I like chainsaws, but only with good footing and thick clothes.
