Though rather more dramatisation than documentary, I will forever recommend 2001's
Conspiracy, with the likes of Kenneth Branagh, Colin Firth and Ian McNiece. It's a recreation of the infamous 1942 Wannsee Conference, at which the finer details of the Nazi "Final Solution to the Jewish Problem" were discussed, based on the minutes retained by Martin Luther; the only surviving record. One IMDB reviewer says it better than I ever could: "People look at the pictures from Dachau and Buchenwald, the piles of starved corpses and the lamps made of human skin, and they say, `How could they?' Watch the movie. This is how they did it: over drinks around a table."
On a lighter note: if we're talking mockumentary, then for my money
The Rutles: All You Need Is Cash wins hands down.
