Did he describe it there, then?
Here I was thinking it was just some traditional story that had been passed orally through the generations and eventually got put in a more permanent form.

I'm simply meeting halfway with the creationist. I'm assuming the Judeo-Christian god exists and I'm assuming every last word in the Bible is in there because he wanted it in there.

That's not going half way... that's playing on their field, with their rules. They'll beat you every time (or think they did, which is remarkably the same to them). You just can't beat circular reasoning.
There's no magic scissors that can cut the wheel of power.

What they need is to see things the way we see them, they need us to show them our POV and they can then make up their own minds about it.
We'll never be able to convince them that the arguments in their holy book are wrong... Just look at this whole discussion on Tyre: AF - Failed Biblical Prophecies and see how the religious mind just keeps making up excuses to uphold whatever is written as true, even when confronted with an opposing reality.

Judging by the silence from theists on this thread, I take it no amount of mental backflips can produce an answer to my OP with the words "God","Will" and/or "infallible".

I thought so...
