Yeah, I could see a vegetarian chili working.

Also, like Locke, I will occasionally mix in some pasta -- chilimac is one of my son's favorite dishes.

I don't have a recipe. I make it homemade everything however I feel like it. Use real chile peppers. Homemade chipotle peppers. Whatever meat I feel like using. I made this low(ish) carb chili once that had chicken, stew beef in cubes, and 2 lbs of bacon. It. Was. Amazing.

Tofu should work. I've seen some recipes use it.
But some comments said if you don't like, or don't want to use, tofu, you can add more bean varieties to get the meaty texture and add more protein to the chili.

Interesting idea posed by the both of you. In Cincinnati and environs, they serve it over spaghetti. Grated cheese, oyster crackers, etc, etc.

I'm a Cleveland girl and mum always said that Cincinnati had weird food

My late bio-dad's folks are Clevelanders and they have something similar, but with macaroni, I believe. Either/or. Even rice, I reckon.

Chilimac is what we call it and it's good but I prefer goulash (American style) to chilimac
