I am a sauce on the side kind of girl.. and all different types.. sweet/spicy tomato based, mustard based, the vinegar stuff... but the best BBQ doesn't need sauce IMO. If it does, you are trying to cover something up... (I got that from CD, and I think he is right.)

I disagree with the sauce thing: while, yes, you don't have to use sauce if the BBQ is good, but sauces are yummy, and I'd hate to cut them out.

That's my view - if you *need* to sauce it for it to taste good, you did something wrong. But sauce is good. :p

What I object to is things like brisket that are pre-sauced and chopped. Sauce covers a lot of sins. I'll take my sauce on the side.

As Kitty said, around here, what a lot of people call barbeque is just grilled meat. Proper barbeque is cooked with wood smoke, low and slow. Served with proper sides like mac and cheese, cornbead, greens, beans and rice, baked beans, macaroni salad and the like.

Beyond all that, I don't care if it's Texas, Carolina, St. Louis style, or wherever else, as long as it's good.

Oh, I love those BBQs too. I partly grew up in NC, and they do it so well, IMO.

Oh, and if you ever make it to a Dinosaur BBQ, go. Don't even think twice. I think they have ten locations now- they started in Syracuse, where I finished growing up, and only had the one location until 1998. They won "Best BBQ" from ABC in 2009, #2 last year by the Daily Meal, and five of the top thirty from OpenTable last year. It just takes a trip to the northeast. Bummer. My mom sends me the sauces I love from them in a care package about three times a year, and I have their cookbook, though, so it's something Smile

For ribs, I do the britu method. Best ribs in the universe. Weber bullet smoker. Works like a charm.

Lately, The troops have developed a fondness for smoked and pulled chuck roast. Easier than brisket and so tasty. Probably smoking next weekend now! Thanks!

I'll be grilling sirloin on my Brinkman's Monday, and probably following that by smoking some jerky. I'll be using mesquite-lump charcoal for the steak, and once it's done, drop the coal pan, add raw mesquite, and let the jerky smoke for six or eight hours. If not Monday, Wednesday, and pics in this thread.
