Primarily because taste receptors vary slightly according to body chemistry (this also accounts for 'good' and 'bad' smells).  There may also be unpleasant mental associations with certain foods.

Actually, the older the book, the better the smell.  As compounds in the ink and paper begin to break down, the mimic the volatiles associated with vanilla and almonds.  New books (to me) have a rather unpleasant chemical stench.
