GC (Godschild) is a highly skilled carpenter. He may be able to suggest something that would be in line with your skill level.

A carpenter, you say?

Does he walk on water?  And is he a hit at parties where there aren't enough snacks?

Hey, they can put their heads together and make an ark.
The instructions should be in an old book.

An automatic, easy to use potato peeler, obviously.

It may help us to know what skills you have. Can you program? Robotics? Can you work with wood? Build engines? Weld? etc

you could take an ordinary clock apart, and piece it back together into a metal box, and make sure it would in no way look like a bomb and then say you "invented" it.

Short of that, if you are musician, there are tons of projects for guitar for example. If a car nut, mods to cars are useful and fun. If into planes, you can build a model flying kit.

Gotta have interests to have the need to "do" things.

Build a simple table that is stable and strong without using any measuring tools. A bit of a challenge for someone who doesn't do wood work but not difficult.

God loves those who believe and those who do not and the same goes for me, you have no choice in this matter. That puts the matter of total free will to rest.

Oh I know.... perhaps you can create some new recipe to revive the good ol green bean casserole that is often eaten around this time of the year. Or perhaps you can make improvements to the classic pumpkin pie recipe, throwing in a new twist of flavor?

Not really sure what you're into, but I love creating new recipes.

For another cooking challenge, I give you... the souffle. Try to make one without having it fall. Easier said than done.
