It's a combination of coincidence and utter bullsh*t, but mostly - bullsh*t, just like all stories in holy books.
BTW - ever been to northernmost parts of the Earth, like Finland? A "day" can last half a year there. I wonder where did people, who made up the Joshua story, could get the idea?... Nah - most likely it's just the fact, that primitive people tend to make up independently the same bullsh*t all over the world, because their ignorant, fearful little brains work in the same way. Humans - being a single species - tend to crave the same simple things - safety, food, sex, and their fairy-tales reflect that, regardless of geography.
And it so happens, that super-long days are a wet dream of most people, who can't function very well in darkness, while their predators - can. Not to mention that sun was necessary for growing food and long days were the ones when food was relatively plentiful, in technologically undeveloped cultures.
