Not only does it make him finite, it makes him semi-sentient. A mind which featured no complex mechanisms would be nothing more than a raw quale, feeling thoughtlessly in the void.

Indeed, if god is omniscient and knows all future events, then that would mean that he has an "actual infinite" in his mind at all times.

Divine Simplicity isn't a simple topic. It is the topic of Question 3 of Aquinas's Summa Theologica. His treatment of Question 3 consists of 8 Articles, each of which considers multiple points.

A "simple mind" is like a "high-entropy quantum particle." Entropy requires multiple particles before it even applies to a state of affairs, and likewise with mind. Claiming that an ontological simple could be a mind is a category error.

It would make for a good hymn, though. "All rise and turn your hymnal to, 'Let's praise our simple-minded god...'"
