The grocery store closest to me had a really great guy who made Nigiri with salmon and tuna on rice. If there were no Nigiri only platers out for sale, I would as him to make that for me while I shopped. The new guy they have doesn't seem to understand what an order on request is.
I don't know what happened to him, but the guy they have now, only makes rolls. I have to go about 3 miles up the road to a different store, and they do make Nigiri as part of bigger platters with rolls. Sometimes
