Simple fact mere humans seem to have  figured out that there were 360 joints in the human body before Islam even existed by the fact it's clearly written down. Therefore this isn't a prophecy in favor of Islam. Game, Set, Match

You may want to start by pointing out where the falsehood is exactly, in this particular case.

What you believe that it was a different set of power hungry maniacs who wrote the hadiths to those who wrote the qu'ran. 

Nobody wrote the Qur'an in its earliest form, the Islamic prophet recited it orally, he didn't write anything. Mainstream biographies of the prophet state that he couldn't write.

I would be lying if I told you I defend my beliefs with zero confirmation bias, anyone is biased to what they believe or stand for. But this shouldn't be a problem here, you're presented with a set of texts from islamic scripture that make more sense if the prophet were genuine than if he weren't, my biases and intentions shouldn't concern you at this point. -unless of course, you want to dodge the hard questions and dissert about how irrational I am.

Again: it's not merely about getting some random fact right, it's also two more very important things : 

1) Taking the risk of stating such a fact. 

2) Picking it out of dozens of similar wrong statements or assertions.

So yeah one may be tempted to find some pre-Islam text that shows the number 360 and call it a day, but pre Islam medicine and anatomy stated all kinds of silly claims and theories about the human body, which you don't find in the hadiths or the Qur'an.

My potential explanation is: Someone else, 1k years earlier, a chinese man counted 360 joints as well.
If you want to prove its been a prophecy 1ky after this, then you must rule out the chinese dude being correct, by counting joints of a corpse.

Were you considering that he knew of greek or chinese people dissecting bodies and counting joints and potentially coming to the same conclusion as the Arab a thousand years later?

Honestly, who cares if it is? Let's just assume that some human beings are scryers of some description. It means nothing in particular to Root...and so it means nothing in particular to me. Buried in a shallow grave deep within a remote Indonesian cave, archaeologists have found the bones of a young individual they say could rewrite medical history.

Using radiocarbon dating techniques, scientists estimate the body has lain undisturbed for 31,000 years inside the Liang Tebo cave in eastern Kalimantan province in Borneo, according to research published in the journal Nature on Wednesday.

But the most striking aspect of the discovery was that the young man or woman was missing their lower left leg, with signs it had been carefully amputated when the person was a pre-teen or early teen before their death from unknown causes between 19 and 21, researchers said.

The otherwise remarkably intact skeleton was found by in 2020 by Australian and Indonesian archaeologists, who say the amputation reveals considerable surgical skill and is the earliest example in the archeological record, shaking up our understanding of sophistication of Stone Age humans.

"It's significant because it considerably pushes back our species' knowledge about surgery and complex medicine," said Maxime Aubert, a professor at Griffith University's Centre for Social and Cultural Research in Queensland, via email.

"They had to have a profound knowledge of human anatomy, how to stop the blood flow, anaesthesia, and antisepsis. All of these only became the norm very recently," Aubert wrote.
