It's defensiveness and the "true believer" syndrome.
And you really shouldn't give a fuck what the true believer thinks. They have a problem, not you.

I noticed that even people who don't believe in astrology still resonate with the sentiment that astrology debunkers are cringe. I really want to get to the bottom of why people feel this way. 

I remember there was this one tweet that was very popular. It basically said something along the lines of "you should bring up astrology on a first date because it's a good way of figuring out how closed-minded and judgmental your date is"

People who don't even believe in astrology retweeted this like crazy. What could be their thought process?

That tweet could go either way. If you point out that astrology is childish nonsense, and your date gets up and leaves, they're the close-minded one, not you.

On the other hand, if your date is really hot and you're looking to get laid, maybe astrology is a topic to keep away from.

Any guesses as to what the stick-figure meme is trying to convey? That's my main curiosity.

One interpretation is that it's saying "we don't care that astrology is fake. It's fun and we like it"

I disagree with this interpretation, though. I think it has to be something else

When I see people post the meme in response to others, those people don't seem to be into astrology for the pure fun of it. They actually think astrology is real. The author of the meme may or may not think astrology is real, but the people who resonate with the meme don't seem like the type of people who would be willing to concede that astrology is fake.
