And what the fuck is the deal with 'unboxing' videos? I'm not the sharpest knife in the drawer, but I'm pretty comfortable with my ability to remove the contents of a cardboard box.

Boru It has nothing to do with showing how to unbox something. It's getting to share in the personal experience of getting to see what's in the box for the first time. And it's more fun if the thing being unboxed is something you sent the person. Ultimately it's about the reaction.

Husband watches NASCAR. In the beginning of our marriage he thought he was going to make me a fan. He wanted me to sit and watch it with him. I couldn't sit in the same room and read a book...I was supposed to watch it. Over time I worked my way out of that by making snarky remarks about going fast and turning left and also about the inevitable caution that would come out toward the end so they could line up again thereby giving the current favorite more of a chance to win.
Then I pointed out that stock car racing started out with the moonshiners running shine and outrunning the police I asked why they have to stop the damn race if it rained. Shiners certainly didn't wait for perfect weather. I was then dismissed from the mind-numbing experience of watching NASCAR.

Yup. I mean, I could understand it if they didn't tell you what was in the box beforehand - I likes a good mystery, I does.
But the videos always seem to have titles like, 'Unboxing My New iPhone' or 'Unboxing My New Table Saw' or 'Unboxing My Latest Shipment From Dildos Backwards "R" Us'. Kinda kills the suspense.

It is equally as much a shared experience, as a sex worker is fucking someone, while they masturbate watching that recording of the sex worker on a porn site. That the recording is solo or with a partner doesn't make much of a difference, this mentality is still in effect parasocial. Nothing wrong with wank material, on the surface of it (I have problems with how it is produced in the "professional" industry, but that's a story for another time), just don't create illusions about it, and they'd be fine.
