It is covered, just not well.

Evolution is huge! No man alive full understands every aspect of evolution. It would require genetics, biology, anatomy, paeleontology to name a few.

The basic ideas are fairly east to grasp; mutation directed by natural selection. Unfortunately, poor teaching often concentrates on the simple phrase "decended from apes".

For many, grasping the time scales involved for this to happen is difficult. A lot of people also trip up on the idea we're descended from apes when the apes are still here (missing the common ancestor).

Put simply, it's covered in schools. It's just not covered well enough and some people have difficulty coping with it anyway.
Happiness is all that's important. What makes me happiest is making my loved ones happy.
