Ah, well...
It's hard to rate them. And they meant different things to me at different times.
The ones that spring to mind first are:
Asheron's Call (a MMORPG which I spent an obscene amount of time on)
Street fighter 2 and it's other incarnations (a love affair that has never really ended)
Madworld (an amazing and hilarious gore fest on the Wii which sold really badly but was just so much fun)
Manhunt (the first game to seriously chill me with its atmosphere, a game about being the unwilling star of snuff videos)
Hitman Blood Money (dated now, but at the time it was incredible, stealth contract killing)
I've probably forgotten several others.

Final Fantasy VII
Gran Turismo (any version)
Tomb Raider (earlier ones before they want all shooter-style)
X2 / X3 space games

My choices are pretty old, because so am. I play and enjoy a lot of new games, but I guess I'm too jaded by now, for them to leave an impression comparable to that of games of my youth.
In no particular order:
1. Elite 2 - Frontier
2. X-Com: Enemy Unknown (the original, but the remake is awesome too)
3. Fallout 2
4. Vagrant Story
5. Hitman: Blood Money
I could probably list another dozen titles, each equally deserving of a spot in top 5. That's possibly because when I was growing, games were something of an alternative sub-culture and were created largely by lone visionaries, or small groups of artists, as opposed to share-holder committees and marketing specialists.
