RE: AF Biggest Loser/Fitness Challenge-May 3 to Whenever We're Not Fat Anymore

I've had to revamp my entire snacking scene as well. I am on a low carb diet which helps with weight loss but it also cuts down on my snack options. Obviously nuts are big for a low carb diet but I've been buying a lot more fruit and a lot of beef jerky. Also plain popcorn is pretty healthy but most people don't like it without anything on it. I would love to eat granola but it's higher than oats so I'm suffering through the nastiness that is oatmeal. I do have an oats cereal that I eat as a snack which, while not great, isn't that bad. I eat a lot more often now so my snack amount has increased but I don't eat very much. Even with gaining weight with the baby I managed to lose 6lbs in 2 weeks just by cutting my carbs. (note: no carbs is unhealthy and very hard to do, I'm not promoting that!)

Salads can be wonderful. We still buy and eat some Trader Joe prepared salads but I'm also making some of our own. I recommend this one:
salad greens
thin sliced sweet onion
thin sliced radishes
julienned beets (I just nuke them for 4-5 minutes, cool them off in water, skin them and then cut them up)
thin sliced Fuyu persimmon
fresh pomegranate seeds
brazil nuts, sliced and quickly heated in dry skillet
grated fresh blue cheese
dressing:
apple cider vinegar
pomegranate molases
olive oil

I get my salads prepped from Stop 'n Shop or the local Greek gyro shop. Whole Foods has a good (if overpriced) salad bar too. I wish there were more salad bars around.
I've never tried flash sauteed Brazil nuts. I'm in!

Brazil nuts do taste yummy all toasty.
Weird but as I was scrolling down "Today's Posts", I read the title of this thread as:
AF Biggest Loser/Fitness Challenge-May 3 to Whenever (We're Not Fat Anymore)
Talk about wishful thinking.

I gained 2% extra fat, won't get abs at this rate.......... going to diet better and do some more cardio, the latter I been almost altogether avoiding.
I get up 5:00 am and go to the gym around 5:50 am, but I think I am going to sleep one hour earlier and get up at 4:00 am from now on and go there at 4:50 am.
That will give me extra time for cardio.

I can't seem to lose the chub, but as long as I'm getting my exercise in, I'm happy.
