Many kudos for you efforts. You will become "gifted" at proof-based (theoretical) mathematics by doing proofs. There are only so many types; until you get to some of the really involved things that take a person making mathematics their life well before they got to your age. I'm not one of them, either, btw. A cruise through geometry and linear algebra will see you well on your way to having a handle on doing proofs, believe me.

As far as the beauty eluding you at the time, I'd have to say that being under time pressure to get the material under your belt in time for tests, coupled with your "real-life" activities interfered with that. It wasn't until I was teaching geometry and algebra/math analysis that I had the time to work on it and get that feeling of beauty. I know that is how it was for me, anyway.

CIJS: how honest do you really want me to be? It's the question I'm always asking myself. I'd love to be totally honest with everyone, but I'm very aware some people can't handle it, or just don't want to hear parts of it.

I've decided to give Daniel Kwan's Six Intersecting Pentagonal Prisms modular origami model a go today.  For anyone who would be interested in giving this a try, here are the diagrams for the assembly and here is a video showing the full assembly.

P.S. Via the video, there are six different colors, one for each pentagonal prism and the dimensions are the following: short modules are 3.8cm by 5.7cm (60 units, 10 of each color) and long modules are 3.8cm by 14cm (30 units, 5 of each color).  For anyone who wishes to try this, please be patient and enjoy yourself.  I folded a couple of these about five years ago, and the result is well worth the effort.

CIJS, I'm used to being around tough nuts from my youth and I can out stare most big dudes who eyeball me, but some of my mental health clients can be intimidating in a way I'm just not used to.
I'm learning to do things without turning my back on them.

Call them on it. Even the mentally unstable need to be told when their behavior is inappropriate. If they do it to a stranger they might just end up getting an knuckle sammich.
I don't have an anger problem, I have an idiot problem.

Yes, you're absolutely right, but easier said then done, especially when they've forgotten to take their antipsychotics the day before and you're waiting for the new ones to kick in and they're just watching you intently.
I have been worried for some clients around strangers and I try to make it obvious that I'm their carer.
I'm not sure how far my duty of care extends as I'm fairly sure I have to look out for myself first.
There used to be a large psychiatric hospital here that has been partially closed down in the last few years.
Some of my clients had been institutionalised for many years coming straight from jail where they also spent many years.
So they're not really used to normal society.

You've got people this much on the edge and they're in control of managing their medication?

That sounds like a formula for an eventual adverse event.
