If you run over the head first, it's pretty much cleaned out and ready to eat (after cooking, of course). I've never eaten squirrel, but my dad loved squirrel gravy the way his mom made it. They lived on a farm in rural Minnesota, and my dad's dad died when my dad was 12. Tough times, 1942. She was a great cook, which my mom was not. We loved it when she came out to visit. I can still remember her chicken and dumplings.

Squirrel and dumplings as a happy meal is a story depression era dads love to tell.  It's a sympathy play.  They were made to feel guilty for being depression kids, which only got worse when their older cousins became the greatest generation.  Then, they got drafted and sent to Korea, where they were once again a disappointment.

So, shut up and eat your goddamn squirrel and dumplings.

My grandparents and father, having a farm up in Maine, ate all sorts of wildlife they hunted in the woods. Apparently, as a kid, I ate all that stuff before we moved down here to Florida where that kind of lifestyle was left behind.

I know we ate squirrel when I was a kid. Or at least I know it was cooked and served up, so was rabbit. I am not a big fan of small game meat. But dad was in college and mom was a HS dropout working low paying jobs and it was meat on the table. Not something I sought out on my own.

It was a pest control thing for us. Every morning there'd be a wave of squirrels like a six lane highway hauling ass for the property line - safety, as we weren't allowed to shoot over, beyond, or towards it.

Finally got back on Twitter and reset my password. My ADD kept confusing fields and putting the wrong info in. After several attempts it locks you out for 24 hours. But finally just now I figured it out.
