How do they rationalise all the evidence of a round earth? It's the same as any group that wants to deny something really well-supported:
Really, the tactic is the same, whether it's flat-eartherism, germ theory denial (and its specifically HIV-denying cousin), climate change denial, Holocaust denial, or creationism: find the biggest smoking guns, take something that's either unclear or counter-intuitive, and obfuscate the shit out of it. And when that doesn't work, just do this:

I think it actually has more. They have to account for gravity, why the sun can't be seen at all times (similarly, why the moon can't be seen at all times), how seasons work, etc. All of that is quite easy to explain with a spherical Earth, not so much with a flat one.

The problem with the flat-earth proposition is that it's entirely defined by Poe's Law. There's absolutely no way to tell the difference between a troll and a genuine believer because the proposition is so off the wall to begin with.
