I would avoid using olive oil in cake or other sweet things because it has such a strong and distinctive flavour.  If I have a cake or muffin recipe that calls for oil I usually go with sunflower or safflower oil.

I always substitute all calls for oil in backing with equal parts melted butter.

But yeah, never olive oil. That's just weird.

I'm a big dessert snob, but the only desserts I know how to make are jello (lel) and fruitcake (I leave out nuts, which would anger a lot of folks. My favorite dessert is tiramisu, but I eat cake a lot as well. I'd love to learn both, but I think I need a full oven for cake (not a hybrid nuke/convection).

Here's the recipe I use.  All you need is a stovetop and a pot to make the sugar, egg yolk and milk custard (maybe it could be made in a microwave, but I've never tried it), plus a dish to assemble it in. The mascarpone cheese is the most expensive and hard-to-get ingredient.  I made a half-recipe at Christmas, using just 1 package of lady finger cookies, and added both spiced rum and Kahlua to the coffee before soaking the cookies in it. Pro tip:  Don't soak the cookies too long before transferring them to the main dish, or they'll crumble.  Soak them for a few seconds, cut edge down, then immediately put them into the dish.

I went to a diner in the Hollywood Hills near my Best Western a few years ago, and they had chocolate cake in a mug. I felt like a pretentious ass ordering it, but it was interesting. I think I prefer a more normative format, but #yolo. Even when you're not in Yolo, but L.A.

I'm a master of sauces, a pro at the grill, can have twelve pans cooking twelve different dishes at the same time, non-stop for hours and hours, never burning or spoiling a dish, sending meals out to large tables at the same time, all piping hot and delicious with only one or two complaints a year.
But get me to bake a cake, soufflé or just about any pastry and you will hear yelling, swearing, pots and trays being thrown around the kitchen.
I can barely melt chocolate.
So, Pool, I feel your pain.

That's me. I was a chef for a decade. Never, ever a baker.

I'm the other way around; for me, baking is easy because I started very young (age 7-8). I'm more balanced on the cooking/baking spectrum now, but still have trouble getting steaks and hamburgers just right. Did succeed in frying a small T-bone last night without wreaking too much havoc, but it was close.
