We don't need to know every single thing about evolution to accept that it's true

Scientists who built on what Darwin discovered do. But as far as the average person, no, I agree. 

I can't build a car from scratch, as in melt metal, mold an engine block, or mold a frame, and wire it like a factory, no. But, I do understand the concept of a combustion engine, just like I know Adenine, Guanine, Thymine and Cytosine are. 

I don't accept science because I am an expert, I accept science because it works and I have enough knowledge of it to know it beats old mythology every time.

I already told you that it can..pages ago.  We call that artificial selection.  It can also be present in sexual selection...if...the species in question is, itself, conscious to some meaningful degree.  That;s considering consciousness as an agent of selection.  It is, ofc, already considered as a product of an evolved organ.  

Whatever it is you think your religion has to say on the subject of evolution, it doesn't have anything to object to here.

See above. If your metrics for evolutionary theory being a "complete" theory are to allow for and consider both body and mind, then it's a complete theory by your definition. What's the problem?
