I thought the refit Enterprise from the motion picture the most pleasing ship ever to appear in the Star trek universe. It had subtle enough detail to suggest an engineering construct, and the effects of lighting and marking makes it believable at first glance as part of an organized and established traffic. It's shape suggest it could be an elite cutting edge ship for its environment. It was a pleasing departure from the nonsensical pile of greebles approach to spaceship design that was popular with other sci-fi spacemovies like star wars.
To be honest, the more Star trek dragged on, the more the ships on it appears like props that favored form over function catering to those with cliched taste in form. RE: Favorite Star Trek Ship Design
