Do you have good reason to believe it wouldn't happen?
Given the possible benefit, it seems at least worth investigating the possibility it could change. And the first step would be professional advice, I think.

I think you can go from straight to gay, but not gay to straight. Being gay is like the final form of sexuality.

That's an odd idea. Why think that?
The thirst is real. Going back to being straight after being gay is impossible, I think. It changes something about your brain, trying to get off on straight stuff doesn't work for me anymore.

You know, if this were true. That gay sex could rewire other peoples brains, it would be difficult to explain the existence of any resistance or ill will or outright legal suppression.

If you say this is true for you I believe you.
I do know a guy who was actively impressively openly gay for most of his life (a long-time lover of Allen Ginsberg) who settled down with a woman he's clearly crazy about.
I don't know exactly what they do in the bedroom, but they are more romantic than just roommates.
People can change.

I see no reasonto believe that is true for others, though it may be true for you.
