But people don't, not really. Rationally determining what is most likely to be true is not the same thing as choosing what to believe. There are plenty of people who have tried to 'choose to believe' in a god but have failed because they were unable to lie to themselves in the face of an overwhelming lack of evidence.
I don't believe in god therefore I am an atheist and always have been. I never thought "you know what I won't believe in god now", I just didn't believe.
You can even change your mind about something but you cannot choose to, you must be persuaded or come to a realisation.
You can fix ignorance, you can't fix stupid.
