Explanation #2: The ancient Hebrews had no idea that the earth was a sphere, that it orbited the sun (that the sun and the moon were not, in fact, objects that rotated around us in the firmament) and that "evening" was caused by the earth rotating in such a way that it puts its bulk between the observer and the star that we orbit.

Well, Explanation 1 is dead in the water because as late as the time of Jesus we see that the biblical Earth is still flat. Satan takes Jesus to a high place and shows him all the kingdons of the world. You can’t see all the kingdoms of the world from a single vantage point if the world is a sphere. Even with telescopic vision, you can’t see the kingdoms of ancient America or even southern Africa from Jerusalem.
What we have in Genesis is a description of the solar system as it would appear to a naked, earthbound eye.
