You can test evolutionary theory whenever you want, just by going out to areas of exposed rock from certain geologic periods. If you find a fossil of an animal or plant that did not exist in that epoch, then, "Voilà!", evolutionary theory has been falsified. Of course, individuals have made such claims, only to be refuted later on.
