She probably didn't want to confront you about the real reason she fired you, or even let you know what it was. I mean, I would be pretty embarassed if I was her.
No, it was likely for legal reasons. In America, the law forbids terminating someone on religious grounds unless the job itself is religious in nature -- working in a church, that sort of thing.
