Because an agrarian culture whose survival was based on when to grow crops and when to let what livestock graze where would be intimately familiar with actual yearly cycles that don't require knowing what an orbit actually is to figure it out. Indeed, seasons are evidence of both our tilt and orbit. Same with observing the stars. The moon is slightly different, but also on a regular cycle that can be used with confidence in conjunction with seasons.
