Uhm... Because he was useless and everybody knew it? I mean - Sansa got over his death before it even happened...
But yeah, that's a good question - why has everyone seemingly forgotten, that Melissandre can raise the dead?
It can probably be explained in a number of ways - maybe she tried to resurrect more corpses after Jon, but failed. Perhaps there are some requirements to the process, that are difficult to fulfill. Perhaps when she brought Jon back her magic was boosted, because of having sacrificed Shireen Baratheon, few episodes earlier? Who knows - it's a fantasy show and not a very cleverly written one, as of late... Many characters seem to be motivated mainly by the need to move the plot along...
Of course, the real answer is - there are only 15 or so episodes left before the show is over. The writers need to start tying up loose ends - bringing people back to life willy-nilly would accomplish the opposite effect. I won't be surprised if a few more characters, who's fate is unknown at the moment come back in the near future, only to be killed shortly after. Gendry? Hot Pie? Naimiria? Sand-Snakes? Robin Arryn? Quaithe? Syrio Forel? Kraster's wives?

Also - Rickon ran in a straight line for over a minute, before being hit in the heart, it would appear, since he was killed instantly. At that point he should have been over 300m away and at such distance accuracy is almost impossible even with a modern bow, so basically Ramsey got extremely lucky. But we all know that Rickon simply had to die, no matter what, for the reasons I mentioned above.
