Briefly dated a vegetarian once
He was no different to anyone else.
On the couple of occasions he made food for us, he'd obviously make vegetarian options, which of course I was fine with. I don't think he was the kind of person who would have stopped me from eating meat had we continued to date, and if he had then we'd have ended over that instead. Sorry, I'm not giving up meat.

It can work if at least one or both of the couple aren't extreme in their lack of willingness to budge, and neither is forcing the other into anything.
