Whipped up a batch of potato/carrot/onion pancakes.
Fry on the first side till the pancakes hold together, then flip and continue frying till both sides are nicely browned. Put the cooked pancakes into the oven, clean any stray bits of batter out of the frying pan, let the pan reheat and replenish with a bit more oil, and repeat till the batter is used up. The shredded vegetables will release extra liquid, which will pool in the bottom of the mixing bowl; just dump that when you're finished.
Serve with sour cream and freshly ground black pepper.
- Finely chop 1 small onion and put into a bowl.
- Peel and coarsely grate 1 large potato and 3 carrots (I used a food processor with a grating disk, but I've also done this by hand with a box grater.)
- Add 2 eggs, a bit of flour (about a quarter of a cup; I wouldn't go more than half a cup), salt, pepper, and any other spices you want to add.
