Yeah, but he's Always held survival as the highest importance, rightfully so. He fled without his gold from the dothraki horseman because he didn't want to risk his life for it. I can't see him risking his life to that extent for Jaime. I know what you mean, but it doesn't make sense to me. But, whatever, the show must go on.

I don't think it's as bad as you make it out to be. There are many ways to explain Bronn's somewhat uncharacteristic "chivalry", at least until the show reveals his motivations in a future episode.

First of all - show Bronn is a much more prominent character, than his book counterpart, largely due to his popularity among fans. In fact - he's so much a part of the main cast, that we should expect him to have some sort of an arc, rather than to remain the same one-dimensional sardonic sell-sword. His circumstances have changed - the entire world has changed - it makes sense, that Bronn's outlook on life would at least begin to change as well.

When Bronn refused to risk his life for Tyrion, he was on top of the world - he was about to get a castle, a wife and a high status position. There was nothing more Tyrion could give him, that would compel him to risk his life and fortune against the Mountain. Also - the whole world wasn't at war, there were no dragons, or Dothraki hordes in Westeros, Lannisters looked like they had a strong grasp on the crown, having beaten back both Rob Stark and Stannis. In other words - retirement in King's Landing might have seemed like a viable option, back then.

Right now Bronn's future is directly connected with Jamie Lannister. Given his previous association with Tyrion, he can't really hope for Queen Cersei to have much of a soft spot for him, never mind a castle, especially if he comes back to her without Jamie. He hasn't got a castle, a family, or anything else to fall back on, really, even the gold he was given he just lost. And having worked for Lannisters for a few years now (hard to tell exactly how long, due to all the "jet-packing", that's been going on) he definitely has made some enemies. He's not just some unknown cut-throat anymore, nor does he want to be, having tried "the good life" among the upper classes.

Moreover - being in the middle of a losing battle on his own, among all the enemies - he's very likely to be indiscriminately killed, along with other Lannister soldiers. As a part of Jamie's "entourage" and one of his officers - he has a better chance of being captured instead. In fact - if he does end up a prisoner - having saved Jamie's life could re-gain him the favor of Tyrion, who might be willing and able to persuade his queen to let his old pal live, at least temporarily. Bronn has drunk enough wine with both Lanninster brothers to know, that there is a strong bond between them, even if they're on opposing sides of the conflict right now.

If he was feeling particularly cheeky - he could possibly even claim, that he knocked Jamie off of his horse, as an act of betrayal - in order to prevent him from lancing Daenerys, so that he could switch sides (although the success of that "strategy" would largely depend on how many people could identify him as the guy shooting the ballista at her dragon; still - a long shot is better than none).

And if he and Jamie make it out of that slaughter somehow, having Jamie (who - as we know - is rather helpless without his sword-hand) as a potential hostage/prisoner could give Bronn some leverage, if he needed to subsequently negotiate for his life, or gold with either Cersei, Tyrion, or Daenerys.

In other words - Bronn hasn't got much to lose, at that moment, and he's most likely still looking out for himself, when he stops Jamie's suicidal charge. He risked his life for Lannisters a bunch of times before, even though he wasn't surrounded by Dothraki and dragon fire. Desperate times - desperate measures.

Or perhaps he's just gay for Jamie... Tongue I mean - who could blame him?
