As noted, there appears little desire among atheists to organize and unify, unlike, say, humanists, but that's not to say that you couldn't start something. My only caveat is that there are already websites which address various atheist interests.
The proof is in the pudding. If you believe in something, try to make it a reality. If 2016 was any lesson, taking a poll isn't any guarantee that something will or will not be successful.
You never know what the market for something truly is until you put it out there. Heck, Joods' cat has a Facebook page with a healthy number of followers.
