I could feed you some of our venison - and you would believe it to be very lean beef.
The deer in this area eat the same thing cattle eat..
Also - I am fanatical about my processing. I do not "age" the meat - but work very hard to get it washed and chilled as quickly as humanly possible. If the.meat is loaded with blood due to a fast kill ( headshot) then I soak the meat in cold water for 8-12 hours before processing.
My dad never acquired a taste for ganey venison - but always gets seconds with any I serve....
If you ever come down under, be sure you try kangaroo. Quite few supermarkets sell it. Mainly as steaks as well as sausages and mettwurst. I've only ever eaten it once and that was because I thought it was beef, even after I'd eaten it ,as sate at a barbeque./ Kangaroo is a very lean meat, much leaner than beef, and is recognised as appropriate for a low cholesterol diet.
Apart from 'roo, Emu meat is eaten and up north, crocodile. Have never tried either.
There are all kinds of more exotic animals and grubs also eaten, but not by me.
