And, so, the Theory of Relativity or Evolution, the Germ Theory of Disease or the Theory of plate tectonics are not science.

they are not beyond doubt.  unlike religious tenets for which doubt is death, scientific theories are only as strong as the doubt which had been cast upon them and will likely wither in folly if taken for granted.
