As I recall, part of the dynamic of that movie was that Clarice was supposed to be a rural American, not at all sophisticated. She's resourceful and clever, not stupid, but culturally not sophisticated. While Hannibal has high-class cultural tastes.
In fact the only character in popular culture who would read Dante or T.S. Eliot is a serial killer cannibal.

Your characterization of Starling is also way, WAY off base.
