Since we aren't doing Thanksgiving till tomorrow, maybe I will be okay.  But while prepping other things in the morning a turkey bath may be part of the deal.

And to Boda - it's a 17 pound turkey.

If it’s brick hard now, one more day won’t work. Not to tell you you bidness, but if it was me, I’d water bath it now.

It's starting to get a little softer.  I will be up before dawn so I will start the baths then while prepping other things.  We aren't eating till about 5 so I think we'll be okay. 3-1/2 days in the fridge and half a day in the water and it should be good.
