You want simple? I put CostCo frozen chicken tenderloins (5) and one frozen skinless, boneless thigh in a skillet, turn it on low and walk away for an hour. I add enough water to dilute the salt solution they freeze it in. If it just gets fried, it's disgustingly salty. That, and a bag of lettuce or some easily cooked vegetable. Mostly my wife sits like a bump and doesn't do anything for dinner, but after a stretch of raw vegetables, that has turned around, slightly. She did boil some spuds, today.
