If Harry Potter had actually been written by Ron Weasley then wouldn't that change everything?

It certainly would, since he is equally as fictional as his wizardy friend.

You only know that because clearly J. K. Rowling is the author and therefore we are able to understand the meaning of Harry Potter. What if HP was a manuscript from 2000 years ago? Could there be some speculation as to who wrote it? I think yes.

However, if we discovered copies of copies etc of manuscripts from many centuries ago purporting to be written by the character, though not actually an eyewitness to the wizard or any of the events he describes, and written several decades after those events... see where this is going?

I do, only that my example of HP is the inverse of what I think the Gospels could be. They clearly don't claim to be eyewitness accounts or written by Apostles. So if we replace the Gospels with HP, I think nowadays Christians think Harry Potter's 'apostles' wrote 7 books about his detailed adventures in a castle when in reality it could very well have been 1 person by the name of J. K. Rowling who wrote everything therefore the meaning of the 7 books changes drastically.
