Hey all, I was thinking about simple winter foods that wouldn’t break the bank the other day and I’d thought I’d share one of mine to get the ball rolling and see what people like to eat when it gets cold outside.
Quid’s Cheap Ass Minestrone Soup
6 Cups Beef Broth plus 2 cups water
1 lb Cube Steak cut into ⅓ in cubes (Not the tenderest cut of meat but super cheap and super flavorful, and the simmering tenderizes it.)
1 14.5 oz can of Mixed Vegetable medley, drained (the one I use includes peas, carrots, green beans and potatoes)
1 14.5 oz can of Dark Red Kidney Beans, drained
3 Tbs of Tomato Paste
1 medium Onion, chopped
2 cloves Garlic, chopped fine
1 cup small Dried pasta shapes
1 Tbs Italian seasoning
2 Tbs Butter
1 pinch crushed red pepper flakes
Salt and pepper to taste
1. Add onions and butter to large soup pot, and sweat over medium-high heat until the onions soften. Add Beef and Garlic, and cook until meat is browned.
2. Add stock, water, and tomato paste. Whisk or stir until the paste is well combined. Add vegetables, beans, Red Pepper Flakes, and Italian Seasoning. Bring to boil.
3. Once at boil, reduce heat and add pasta. Simmer for 1 hour, or until pasta is cooked and a layer of fat has risen to the surface. Season with salt and pepper to taste.
4. Ladle into bowls and serve with a nice bread or shavings of Parmesan cheese.
