I think there's some parts of the military where that sort of thing's actually standard. Apparently, in Week 3, you receive a rifle, and you spend a good portion of the next few weeks dismantling and rebuilding it over and over until you're ready to pistol-whip the Drill Sergeant. And some even teach doing so blindfolded; so that if a soldier gets eye damage or is in a sandstorm and needs to fix his gun, he can easily do so. So, it's not just something they made up for Forrest Gump. Of course, doing so in less than a minute, I'm not sure about.
Only an armorer (and maybe some special forces troops) would be trained to take down a gun into that many pieces. Most soldiers would get in big trouble for taking a trigger group apart.
