I think that holocaust denial tends to take the form of "six million Jews did not die, it was 1 or 2 million at most." It's not a denial that the Nazis murdered millions of prisoners (both domestic and military) as much as it is an attempt to deny that Jews were targeted specifically, or to claim that they inflated the numbers to gain sympathy and political power.
The Nazi government did not get time to destroy many of their files and documents as Soviet and allied forces swept into Germany, and there was a massive trove of paper documentation that was preserved. It's been a while since I read any of the relevant books, but I think that Shirer's Rise and Fall of the Third Reich and Martin Gilbert's The Second World War show the paper trail that lays out the plans to wipe out the Jewish population of Eurasia and later the world. Gilbert's book describes dozens of individual events where Jews were massacred in large groups by the army or special detachments of the SS as part of the plan to wipe them all out.
