The Bible. All or nothing?

I suspect this is primarily a protestant problem, the Catholics are perfectly aware that they wrote/compiled/edited the bible so don't generally see it as entirely accurate in the first place. They're also more aware that a whole lot of interpretation is involved which is why they defer to priests more than start spouting off at every point of blatant cobblers.
I suspect the protestants are are more restricted in what they can fall back on though that doesn't stop them from redifining that which is cannon and that which is considered apocryphal...
