The bible stories were generated in an era of competing scriptural authors. It was a gathering of diverse writings and slapped together by violence and political intrigue.
No biblical scholar that isn't stoned out of his head would say that it passed through history unchanged.
Not only that, the book itself is so erratic and vague that it has created thousands of differing interpretations that has resulted in thousands of sects. Each believing that "they" got the true message that the bible god magically imbued into the pages.
Science books are changed mostly by better elaboration and occasionally by new interpretations of observed phenomena. Since they do not lean on authority but rather observation and investigation, they do not suffer the misinterpretations and vagaries that the bible does.

If you did some good study in the Dead Sea scrolls you might be surprised how incredibly unchanging it has been through the centuries
