When and how you first experienced Star Wars might have a lot to do with it. There really was nothing else quite like its visual special effects before. Also, Dolby sound technology existed and had been used before, but there was some genius in how it was used in Star Wars. The meticulous detail and combination of both created a revolutionary audio-visual experience. Even with the advent of CGI and the passing of almost 40 years, this aspect of the film still holds up remarkably well in my opinion. Star Wars is also one of those films that is markedly different in the theater.
I was 7 when my father took me to its opening. A simple plot and underdeveloped characters don't mean much to a 7 year old, but these realizations later in life didn't degrade the movie in my opinion (I was likely already too attached). I can look beyond this, because I still find much of the banter witty. There's certainly nothing philosophically deep about Star Wars, but the pastiche of tried and true plot devices supports the action; even if overly operatic at times.
I almost forgot to mention John William's score.
