Literally, he can't. It would be physically impossible: the immunity he has to various diseases are all down to vaccines, which are a product of science.
Having said that, I think the problem with Christian's worldview, and the OP's fundie friend too, is their priorities are totally out of whack. They seem to prize the firmness with which an idea is professed, over the accuracy of that idea. The bible never changes, they say, as though that was a good thing. It would be a good thing if our knowledge had never moved on, but it has, and as a consequence the bible's claims about the world have become firmly worded comedy acts.
Compare science, which yes, does change in accordance with the evidence, and does get it wrong, but as a consequence actually produces results that have revolutionized the world over and over. To the person who brings up science's constant changing as though it were a weakness, I would ask two questions:
When was the last major breakthrough, in any field, that science has produced?
When was the last major breakthrough, in any field, that the bible has produced?
The time difference between those two answers alone should be a good demonstration of what is producing more results, but for those not convinced here's a third question: Which of those two breakthroughs can you demonstrate to be real, or have real world effects?
