That would be cool. We could discuss atheism and skepticism, and invite open minded religious people to the group so they can learn about the Atheist/Skeptic/Humanist movements and what we stand for instead of them listening to their religion demonizing us as if we're trash.

That'd be cool, but what if people just show up for the food? It would be difficult to retain participants if they only attend for the food.

I would, but I don't have many openly atheist friends. I have an Atheist cousin. But I still don't know too many atheists to be able to actually start this sort of thing and be successful about it.
