How does that new quote function work? I only get a plus or minus sign when I click quote, but I don't see how and where I could insert the text I want to quote. And when I hit reply at the bottom of a post, I get the whole thread as quote.

You select the post(s) you want to quote for quick reply. the minus sign indicates that you want to exclude that quote when you click on the "Quote these posts now" (or indeed "deselect them") on the quick reply box.

Currently is selects the entire post and not a specific element within it (though you can obviously delete as necessary).
